This past week I decided to try something completely new for me... I made my first vegetarian and vegan dish! It was quite creative and tasted amazing!
To sum up the dish, it was bell peppers filled with vegetables and cheese (vegetarian) or vegan white sauce. I also made a pepper with mince and vegetables as my family isn't particularly fond of vegetarian/vegan food.
It is really simple and quick to prepare, making it perfect for those evenings after a long hard day at work. It fills you up so there is no need to make additional dishes. With this dish you will be able to cater for all your friends, whether they are vegetarian, vegan or meat lovers. Even my grandpa, who doesn't like bell peppers at all, ate his entire pepper!
I would say the presentation of the vegetables in the pepper is rather unique and fun. Something other than the usual.
Unfortunately I forgot to buy some vegan cheese to add to the vegan white sauce. Next time that is definitely something I will add.
I sent some photos to a vegan friend of mine and he said it looked delicious. Thus, mission accomplished with this recipe!
I leave you with the recipe to try next time you have a vegan/vegetarian friend over or when you are tired after work and want to make a quick, healthy and filling dish.
Ingredients:
Basic:
Bell peppers
Mixed vegetables
Garlic
Italian herbs
Black pepper
Salt
Vegetarian:
Grated cheese
Vegan:
2 tablespoons olive oil
2 tablespoons flour
2 cups soy milk
salt
Black pepper
Method:
Basic:
Place the mixed vegetables in a pot with some water and heat it up.
Add the garlic, Italian herbs and salt.
Let it boil for 4 to 5 minutes.
Cut the tops of the bell peppers off, and place the vegetables inside.
Replace the tops of the peppers.
Place in the oven at 180˚C for 15 to 20 minutes.
Vegetarian:
In filling the pepper, alternately place cheese and vegetables in until the pepper is filled.
Vegan:
Make the vegan white sauce by warming the olive oil over low heat.
Add the flour and mix with a whisk.
Add the soy milk and mix properly.
Let is heat up and boil until it becomes thick.
Add the salt and pepper.
In filling the pepper, alternately place the white sauce and vegetables in the pepper until it is filled.
Notes:
I don't place it for too long in the oven, you still want the pepper to be firm and sweet.
I used white cheddar cheese for the vegetarian.
You can add chicken, mince or bacon should you want to make a non-vegan/non-vegetarian dish.
I bought a pack mixed vegetables with celery, sweet potato, pumpkin, green beans, carrot and onion.
