The perfect omelette

One of the earliest dishes I made was an omelette. It was my favorite breakfast meal. But I always kept it plain with cheese and then my favorite sweet chilly sauce. So, I recently decided to experiment a bit to find the perfect omelette.

As all of our taste differs from each other your perfect omelette may not be the same as mine but I decided to share mine as it is a good starting point in finding your own. The internet has countless recipes to try so why not try an new omelette each time until you find that one perfect one.
One can be really creative with your omelette! From plain to building an omelette dagwood! As it really fills you up it is the perfect meal to start your day. Or, why not make an omelette for brunch over the weekend or a holiday?
I find that an omelette is best served with a warm cup of coffee or some freshly pressed orange juice. Maybe also a little salad on the side.

Ingredients:
vegetable oil
bacon
chopped onion
hand full spinach chopped
black pepper
3 large eggs
salt
grated cheese
feta cheese
Method:
Pour some of the vegetable oil in a frying pan an fry the bacon.
When cooked, place the bacon aside.
In the same pan, fry the chopped onion and spinach for 2 to 3 minutes with some black pepper.
Set aside with the bacon.
Beat the eggs and salt with a whisk.
Add some more oil in the pan and swirl so that the entire base is covered.
Pour the eggs in the pan.
When the eggs are cooked, turn down the heat and add the bacon, spinach, onion, cheese and feta cheese on 2/3 of the egg.
Using a spatula, fold the omelette.
Notes:
I didn't have bacon at the time so used some ham which was just as good.
Don't cook the onion and spinach too long.
