Orange delight

"Orange is the happiest color" - Frank Sinatra.

This quote from Frank Sinatra immediately caught my attention. And I honestly experienced it in baking these orange cakes. It is warm and cozy and at the same time bright and cheery. But enough on the orange color...

About two weeks ago my brother came to visit us along with my parents and he told me about the orange cake that he baked a while ago. It sounded like a fun and delicious baking adventure and thus I had to embark on this adventure.

And what an adventure it had been! With my brother at my side we created two stunning orange cakes that tasted and looked unique.

The one was plain and was decorated with some icing sugar and orange peel flowers, whereas we made an orange syrup to pour over the other cake. The orange zest created a nice effect on the cake with the orange syrup.

It was easy to bake and all of my family loved it so I think it is safe to assume it was a success! So grab someone and experience how orange is the happiest color with this orange cake. And why not listen to some Frank Sinatra whilst baking.

Ingredients:

Cake:

2 cups all-purpose flour

2 teaspoons baking powder

2 tablespoons orange zest

3/4 cup orange juice (poured through a sieve)

3 eggs

1 cup sugar

1 cup vegetable oil

pinch of salt

Orange syrup:

1/2 cup water

1/2 cup orange juice

1 tablespoon butter

2 cups sugar

2 tablespoons orange zest


Method:

Cake:

  1. Preheat the oven to 180˚C

  2. Spray 2 loaf pans with nonstick spray and lay out with wax paper. Spray nonstick once again.

  3. Sift the flour and baking powder together.

  4. Mix the eggs and sugar together using a hand-held or stand mixer. Mix for 2 to 3 minutes

  5. Add the the flour and orange juice alternately, adding them in 4 to 6 steps.

  6. Add the orange zest and mix thoroughly.

  7. Divide the batter between the 2 pans.

  8. Bake for about an hour or until a knife comes out clean after pricking the cake.


Orange syrup:

  1. Simmer all the ingredients together for about 3 minutes or until all the sugar is dissolved.

  2. Pour over the warm cake.

Notes:

  • When zesting the oranges, be careful not to zest the bitter white of the peel.

  • I only made half the orange syrup and poured it over one the cakes - the orange cake without the syrup is just as good.

  • Using a peeler, peel some of the orange (be careful not to peel too deep). Roll the peels up to make a flower to use as decoration. Use a toothpick to punch through to keep their shape.

  • Dust some icing sugar over the orange cake without the orange syrup.
