Fun with fudge

I remember making fudge with my mum when I was still in school. My very first attempt was almost ruined when I did not let it boil long enough but my mother was able to salvage the situation and it came out delicious and sweet. After that I learned that patience is key in baking. I made several batches after and each time the fudge came out wonderful.

This past weekend I had some fun with bittersweet, delicious and unique fudge. Instead of making the usual vanilla fudge, I tried make three different flavours: Hazelnut, Chocolate and Choc-mint. I only made one batch of the recipe and then divided it in three to add the three flavours. It was a bit of a challenge making the three flavours out of one batch as you have to work real quick when the it becomes thick.



On Monday I used my colleagues as test subjects (not that they minded) to see how the fudge came out. After hearing that I should bring them baked goods more often to test, I think that it is safe to assume it came out as a big success. And I can say that after tasting all three blocks of fudge, my co-workers were the Sweetest people for the rest of the day!

There is, however, a bit of a problem... Once you start you can't stop! With tasting the fudge in the making and enjoying a few afterwards, I will have to do some extra cardio this week! But it is definitely worth it!

Next time you make fudge, play around a bit with flavours! I want to try making fudge with coconut sometime. There are recipes that is a lot easier than this one (microwave fudge) but I like this recipe better.

I hope you have as much fun making this fudge as I did and please share the flavours you experimented with!



Ingredients:

1 1/2 kg white sugar

1 cup all purpose flour

1 can condensed milk

the can filled with water

3 tablespoons golden syrup

250 g baking margarine

1 table spoon white vinegar

1/2 teaspoon cream of tartar mixed with 15 ml water

2 teaspoons vanilla

Choice of flavour


Method:

  1. Mix the sugar and flour together in a pot.

  2. Add the condensed milk, water, syrup, margarine and vinegar.

  3. Stir over low heat until everything is dissolved.

  4. Add the cream of tartar when it starts to boil.

  5. Stir regularly.

  6. Let it boil for 25 to 30 minutes.

  7. Add the vanilla and your chosen flavour.

  8. Using a handheld mixer, mix until it becomes thick - about 4 to 5 minutes.

  9. Pour in a pan sprayed with non-stick and let it cool.

  10. Cut the fudge in blocks and store in a container.


Flavours:

  • For the hazelnut you can add as many as you like. You can either place them in whole or use a rolling pin to crush them and then add it.

  • For the chocolate, add 70 ml of cocoa powder.

  • In case you want to make choc-mint, grate 2 peppermint crisp bars and add it to the fudge along with 50 ml cocoa powder.

Notes:

  • In determining whether it has boiled long enough, drop a teaspoon of fudge in water, if it forms a ball it should be ready and you can add the vanilla and flavour.

  • Place wax paper between the layers of fudge when storing them to prevent them from sticking to each other.
