Berry Snow Forest

I love this cake berry much!
I decided to make the name of the post 'Berry Snow Forest' as the whipped cream reminded me of snow and the arrangement of the berries and chocolate made me think of a forest.
I never heard of anyone who doesn't love strawberries or any berries for that matter. Thus, you can't go wrong with this cake. It looks elegant and playful at the same time. The cake is soft and fluffy and the whipped cream frosting goes along nicely.
It is perfect for a tea party, birthday or having friends over.

You can basically use any recipe for the cake. I decided to use a vanilla cake recipe and added some cocoa to make a chocolate cake. I am pretty sure a vanilla cake or even a red velvet cake (see my Velvelicious post) would be just as good.
For the icing I used some cream whipped together with castor sugar. The decoration was my favorite part! For the the decoration I used some strawberries, raspberries, blueberries and chocolate.
It was a bit of a challenge cutting the cake with the berries and chocolate in the way. And with everyone breathing down my neck and checking that I don't give someone more berries than the other!
The berries and cream was a bit expensive, but in the end it was worth every cent. Below is the recipe that I used should you want to create your own Berry Snow Forest. Happy Baking!
Ingredients:
Cake:
4 eggs
450ml sugar
pinch of salt
2 teaspoons vanilla
2 cups all purpose flour
4 tablespoons cocoa
2 teaspoons baking powder
1 cup warm water
60 ml oil
Frosting & decoration:
2 cups cream
3 tablespoons castor sugar
Strawberries
Raspberries
Blueberries
Dark & White chocolate
Method:
Cake:
Spray 2 pans with non-stick and place a circle wax paper in each. Spray again.
Using a handheld or stand mixer, mix the eggs and sugar together for 5 minutes.
Add the vanilla and salt.
Sift the flour and cocoa over the mix.
Distribute the baking powder over the mix and flower.
Mix the water and oil and pour over the baking powder - it will fizz.
Mix the batter and divide it between the 2 pans.
Bake for 25 minutes at 190˚C.
Frosting & Decoration:
Using a hand held mixer, beat the cream until peaks form.
Add the castor sugar and mix in.
Ice the cake when it is cooled down.
Melt the chocolate, pour onto cling wrap and spread it out.
When set, break the chocolate to make it look like broken glass.
Stick the chocolate pieces in the cake.
Arrange the berries on the cake to your liking.
Notes:
As mentioned above you can use another cake recipe.
I had whipped cream to spare, so unless you make a 4 layer cake, it might be better to only use 1 and a half cup of cream for the frosting.
Be careful not to beat the cream too long - or it will form butter.
Instead of making broken glass pieces of chocolate you can also grate some chocolate over the cake.
